Create easy but tasty yoghurt and honey spheres using a Sodium Alginate bath.
(This recipe does not require addition of Calcium Lactate as the yoghurt is naturally rich enough in calcium)

200g Natural Greek Yoghurt
40g Honey
Pinch Cracked Black Pepper
Sodium Alginate Bath (See Sodium Alginate Bath Recipe)
Mix the natural greek yoghurt, honey and cracked black pepper together well.
Drop small spoonfuls of this mixture into a bath of Sodium Alginate, making sure they are well spaced out. Allow to react for 30 seconds. Remove from the bath with the molecular spoon and rinse in a bath of fresh water.
Store in neutral oil until ready to serve. Serving suggestion - pair with walnuts and strawberry for a simple but interesting dish.
