Special Ingredients Ltd
250ml Watermelon Juice
50g Caster Sugar
15g Lemon Juice
1.5g Special Ingredients Sodium Alginate
0.5g Special Ingredients Sodium Citrate
Blend all the ingredients together well. Pass the mixture though a sieve or muslin to remove air bubbles.
Use a pipette or syringe to make caviar spheres by dropping the watermelon mixture into the calcium bath.
Allow the caviar to react for thirty seconds then remove with a molecular spoon and rinse in a bath of fresh water.
Serve as soon as possible after making.
