28g Meringue Powder
32g Corn Syrup
12g Special Ingredients Vegetable Glycerine
6.5g Special Ingredients Vanilla Extract
907g Powdered Sugar
240g Water
Place the Meringue Powder and 120g of water into the bowl of a stand mixer and whip on high speed until the mixture becomes light and foamy.
Add 450g of the powdered sugar and then blend on low to incorporate, then increase to high speed until the sugar is fully absorbed.
Introduce the corn syrup, vegetable glycerin, and vanilla extract, mixing just until evenly combined.
Add the remaining powdered sugar and begin mixing on low; gradually add in the remaining water as needed (it may not all be needed), taking care to maintain a thick base consistency. You can make final adjustments when portioning for specific uses.
Increase to medium-high speed and continue mixing for 1–3 minutes, or until the icing is smooth and free of lumps. Avoid prolonged high-speed mixing, as over-aeration can compromise the icing’s ability to dry to a proper finish.
