Create this light, airy foam which are great for finishing both savoury and sweet dishes.
Special Ingredients Ltd
5g Dried rosehip (or 5 rosehip teabags)
300g Water
20g Rose Water
10g Lemon Juice
100g Sugar
4g Special Ingredients Lecithin
Optional - 3 drops Special Ingredients English Rose Food Flavouring Drop.
First prepare a rosehip infusion by bringing the 300g water to the boil and pouring over the dried rosehip. Leave this to cool and infuse for 1 hour.
Strain the rosehip infusion and add the rest of the ingredients then blend together.
Now angle the head of a stick blender so that it is partially submerged in the liquid and blend to produce a light airy foam. When ready to serve, spoon this light foam off the top of the liquid.
Serving suggestion - These light airy foams are great for finishing dishes. This could be used with either savoury or sweet dishes.
