Create this flavourful garnish to finish off your Molecular Gastronomy dishes. Orange glass pairs well with beetroot and goats cheese.
Blend all the ingredients together (except the beetroot powder if using).
Once the mixture has thickened spread it thinly onto a non stick sheet and dust with the beetroot powder. Dehydrate the mixture at 70C overnight. If you do not have access to a dehydrator put the sheet in an oven on its lowest setting overnight (ensure this is safe for your oven first).
Break the orange glass into shards and store in an airtight container with silica sachets if possible.
Serving suggestion - Use the glass as a flavourful garnish to finish dishes. This orange glass pairs well with beetroot and goats cheese, or meat flavours.
