Create delicious Vegan Meringues using Special Ingredients Easy Whip.

200ml Fruit Puree (We have chosen Mango and Strawberry to demonstrate this recipe)
2g Special Ingredients Easy Whip
50g Caster Sugar (or more/less if preferred)
Depending on the quality of the puree, it may be preferential to add 1g Special Ingredients Malic Acid to boost the flavour profile of the puree.
Special Ingredients Piping Bag
Using a standalone mixer with a balloon whisk, simply mix 2g of Easy Whip and chosen fruit puree until fully dissolved.
Whip on a higher speed until aerated (about 3 to 5 minutes)
Using a piping bag, pipe meringue kisses or meringue nests onto a silicone mat.
Dehydrate for 8 to 12 hours at 60℃. If you do not have a dehydrator, place in a low oven (100℃) with the door slightly ajar for the same amount of time.
Note: Serve immediately or store in an airtight container in a cool dry area.
