Create a light, airy foam for any cocktail or drink by blending a Sucrose Ester mixture, perfect for adding a fun twist to your favourite beverages.

Warm the water in a saucepan and add the Sucrose Ester. Whisk or use a hand blender until the Sucrose Ester is dissolved.
Bring the mixture to the boil to activate.
Use 1 tablespoon of this formed mixture and whisk into almost any liquid. Using a hand blender, tilt the mixture slightly so 20% of the blending mechanism is exposed. This will allow air into the mixture so it gets trapped and foams.
To illustrate, we have formed a Rhubarb Vodka Cocktail.
