Create a bold Bloody Mary Sauce using Special Ingredients Agar Agar.

Up to 200ml of Tomato Juice
50ml Vodka
2g Special Ingredients Agar Agar
Worcester Sauce, Tabasco, Celery Salt and Pepper for seasoning
Prepare a Bloody Mary base by mixing 150ml of tomato juice with the Vodka and lemon juice.
Season to taste with the Worcester Sauce, Tabasco, Pepper and Celery Salt.
Add extra tomato juice if required to make the liquid up to 250ml.
Add the Agar Agar and bring the mixture to the boil whilst whisking.
Leave to cool.
Once the gel has set, blend thoroughly with a hand blender and pass through a sieve.
Note: To make a thinner sauce, reduce the Agar Agar to 1.75g or 1.5g per 250ml liquid. liquid.
An alternative method to make the fluid gel is to pour the mix into a bowl. Bring the mix to the boil and once it has come to the boil. Slowly blending it with a hand blender on a bowl of ice until it has completely cooled.
This method makes fluid gels of a superior quality, however it is more time consuming.
Fluid gels made with Agar Agar can sometimes start to re-gel if left for a while. If this happens re-blitz it and pass through a sieve prior to serving.
