Turn balsamic vinegar into beautiful, bite-sized pearls with this simple recipe using Special Ingredients Agar Agar.

Vegetable Oil (tall cup full)
100ml Balsamic Vinegar
1.5g Special Ingredients Agar Agar
Put a tall cup of vegetable oil into the freezer until it becomes thick (approx. 30-60 minutes)
Prepare your balsamic mix by heating the balsamic vinegar with the Agar Agar, whisking constantly and bring to the boil.
Once the mixture is boiling, use a pipette to slowly drop pearls of the hot balsamic liquid into the cold oil.
Small pearls will form as soon as they hit the oil. Make sure the pearls do not fall on top of each other as they may join together and form larger pearls before they have set.
Strain, rinse in water and serve.
