Transform dessert wine into a delicate, melt-in-your-mouth gel with this simple gourmet twist.

100ml Dessert Wine (such as Sauternes Wine)
0.2g Special Ingredients Gellan Gum F (Low Acyl)
Mix the Gellan F into the dessert wine (such as Sauternes wine) and heat whilst whisking.
Once the mixture comes to the boil, remove from the heat, transfer to an appropriate container or glass and leave to set (refrigeration not required).
Note: gels can be prepared at a concentration lower than 0.2% - these gels tend to have a better mouthfeel but can be harder to handle.
