350g Chamomile Tea
50g Lemon Juice
150g Sugar
6g Special Ingredients Citric Acid
1.5g Special Ingredients Easy Whip
150g Cranberry Juice
200g Rosehip Tea
100g Caster Sugar
2.5g Special Ingredients Easy Whip
1g Special Ingredients Citric Acid
Combine all Chamomile Foam Ingredients and blend well together.
Place into Cream Whipper and Carbonate.
Chill in the fridge until ready to serve.
Blend the ingredients together.
Whip the mixture to a light foam using a stand mixer.
Spread onto grease proof paper.
Sprinkle with crushed crystalised violet.
Dehydrate in a dehydrator or low oven for 10 hours.
Combine Rosehip & Violet Meringue with Chamomile Foam.
