Ingredients

2 1/2 cups all-purpose flour
1 teaspoon Special Ingredients Bicarbonate of Soda
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup brown sugar
1/2 cup molasses
1 large egg
1 teaspoon Special Ingredients Vanilla Extract

Directions

In a medium bowl, whisk together the flour, bicarbonate of soda, ginger, cinnamon, cloves, and salt. Set aside.
In a large mixing bowl, cream the butter and brown sugar until light and fluffy. Mix in the molasses, egg, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together. Divide the dough in half and flatten each portion into a disc. Wrap in plastic wrap and chill for at least 1 hour.
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
Roll out one disc of dough on a lightly floured surface to about 1/4-inch thickness. Use gingerbread man-shaped cookie cutters to cut out cookies and place them on the prepared baking sheets. Repeat with the remaining dough.
Bake for 8-10 minutes, or until the edges of the cookies are firm. Allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Once cooled, decorate the gingerbread cookies with icing, sprinkles, or candies as desired.
