1/2 cup unsweetened almond milk
1/2 teaspoon Special Ingredients Xanthan Gum
1 teaspoon Special Ingredients Vanilla Extract
1/2 cup granulated sugar
1 tablespoon cornstarch

Directions

In a saucepan, whisk together coconut milk, almond milk, sugar, cornstarch, and Xanthan Gum.
Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly.
Reduce the heat to low and continue to stir until the mixture thickens, about 5 minutes.
Remove from heat and stir in the vanilla extract.
Let the mixture cool for a few minutes, then transfer it to an ice cream maker and churn according to the manufacturer's instructions.
