200g Skimmed Milk
400g Sugar
2g Special Ingredients Xanthan Gum
Stand Mixer
Pastry Torch
Put milk and Xanthan Gum in a stand mixer and start mixing.
Add the sugar a little at a time.
Pipe the mixture into little meringues.
Burn the meringue with a Pastry Torch.
