Special Ingredients
100g Chocolate Chips
25g Cocoa Powder
75ml Sunflower Oil
110g Sugar
150ml Milk
150g Self Raising Flour
1 Egg or alternative as desired
50g Chocolate Chips (According to taste)
Special Ingredients Mint Food Flavour Drops (According to taste)
Add all ingredients, excluding chocolate chips and Mint Food Flavouring Drops, into a large bowl and mix together until fully blended.
Add the chocolate chips and 1-4 drops of Mint Food Flavouring Drops (according to taste).
Share equally between muffin cases. We used 1 dessert spoon of mixture per muffin case.
Bake in a 180 degree C (356 F) for 20 minutes. To check the cakes are ready You can gently pat the top of a couple of cakes to ensure they are a little springy or a skewer or cocktail stick to check that the cake is sufficiently dry (if using chocolate chips, these will still be a little more moist).
Place on a cooling rack for a few minutes and then serve.
