Impress with these delicate Mushroom Champignon discs using Special Ingredients Agar Agar.

200g Mushrooms Champignon
200ml Water
4g Special Ingredients Agar Agar
300ml Chicken Stock
Salt to taste
Olive Oil
Blend the mushrooms then place them into a pan with a small amount of Olive Oil and add the Chicken Stock.
Cook on medium heat for 10 minutes.
Filter with sieve and place in another pan.
Gradually add the Agar Agar whilst stirring / whisking.
Bring to the boil at 100℃.
Pour into a tray and cool down to 20℃.
Cut into small circles using a small cookie cutter.
Arrange several disks in a circle on a separate plate.
