Pectinex is a specialty enzyme that breaks down Pectins structure. Typically used in juice manufacturing. Pectinex has several unique applications in the Modernist Kitchen. It can be used to peel and supreme citrus fruit without using a knife giving a perfect result. It can also be used to remove Pectin from fruit juices and ciders improving clarification and taste. Suitable for Vegans and Vegetarians, Non-GMO, Gluten Free.

How to use: To peel fruit segments: Place / submerge 250g fruit segments in 250ml of water and add 2.5ml of Pectinex. Stir the mixture and cover the container so it is airtight. Place in refrigerator for 48 hours or cook sous vide at 40°C for 30 minutes. Remove segments from the mixture and serve. To remove Pectin from fruit juices: Add 2.5ml of Pectinex to 1000ml of fruit juice (0.25%). Rest for 20 minutes at room temperature. Remove solids from fruit juice.


Storage Conditions: Store in dry, cool conditions and not in direct sunlight. Use within 1 month of opening and store in the refrigerator.
