Methocel dissolves in cold water and gels in hot water, preparing a solution of Methocel cannot be done with just cold water., which will cause the solution to disperse unevenly and a lumpy mixture. The best method to use Methocel is to add to hot water of approx 70ºC, then add twice the amount of cold water to the solution. This will bring the temperature of the solution down and the Methocel will dissolve. For example, if your recipe uses 900ml of water, add the Methocel to 300ml of hot water at approx 70ºC then add 600ml of cold water. Refrigerate for approx 3 hours to ensure all particles are dissolved before using.
